Hamburger month: Spanish Burger

This burger was the result of short brainstorm at my job. I immediately wanted to try this! We often add chorizo to our burger and this new recipe is certainly becoming one of my favourites.

This mix of chorizo, roasted peppers and red onion is an excellent combination.

I originally wanted to try this with Manchego cheese. The problem is Leoni doesn't really like cheese made of sheeps milk and she did the grocery shopping for this burger 🤣.

I definitely want to try it again with this cheese, I think it would be a good match!

Ingredients (for 10-12 burgers)

  • 4-5 red sweet pointed peppers (Ramiro)

  • 1 chorizo sausage (250 gram)

  • 1 red onion

  • 2 cloves of garlic

  • 2 roasted red peppers (from a jar)

  • 1 kilo of minced beef

  • salt and pepper

  • parsley

Side dish:

  • 1 kilo of sweet potato(fries)

  • 50 gram of Parmesan cheese

  • 10 gram of fresh parsley

  • 1 large clove of garlic

  • 50 ml olive oil

  • salt and pepper

Other:

  • 10-12 cornbread rolls

  • aioli

  • red onion

  • Romaine lettuce

 

Method


Grilled peppers:

  • Preheat the oven on 220 degrees Celsius. Place the pointed peppers on a baking tray covered with baking paper. Place the baking tray in the middle of the oven.

  • Roast them for 35-40 minutes until the skin is blackened.

  • After the baking time take them out of the oven and place the peppers in a plastic bag that you can close.

  • After 15-20 minutes get them out and peel of the skin and get rid of the seeds.

Burgers:

  • Cut 100 gram of the chorizo sausage in small cubes to mix with the minced meat. Cut the rest of the sausage in thin slices.

  • Put the minced meat in a bowl. Finely dice the red onion and garlic cloves and add to the meat.

  • Cut the red peppers (from the jar) in small diced and add these together with the diced chorizo to the meat and kneed together.

  • Make the burger patties, each burger will weigh around 100 grams.

  • fry the slices of chorizo in a frying pan without oil until crispy. Take them out and let them rest on some paper to get rid of the excess fat.

Side dish:

  • Preheat the oven on 220 degrees Celsius.

  • Spread out the fries on a baking tray covered with baking paper.

  • Mix the cheese, chopped parsley and oil. Flavour with salt and pepper.

  • Pour the mixture on the fries and make sure to mix everything so all fries are covered in some of the oil.

  • Bake the fries in the oven for about 30 minutes. Stir the fries every 10 minutes to make sure all sides are properly cooked. Set the oven to grill for the last 5-10 minutes.

Finish the sandwich:

  • Cook the burgers in a frying pan.

  • Cut open the cornbread rolls.

  • Spread the aioli on the bottom and top bun.

  • Place some of the lettuce, red onion (half rings) and over grilled peppers on the bottom bun.

  • Finish of with the burger patty and crispy chorizo slices.
