Last year in October we had our first hamburger month 🍔😋. Hopefully we can translate those as well soon. Then we discovered that May is the official hamburger month. So, we'll just do another one! I still had some ideas left that we didn't get to try last time so a second hamburger month would be no problem. Maybe we will keep October as a hamburger month at De Roestige Vork 😎.

I was never a big fan of zucchini. But Leoni has made more and more recipes with zucchini that I like so now I am even trying to add them to a burger!
I came across different recipes and decided to try it myself. So here it is, our chicken-zucchini burger. Thinking about the sauce I figured a tzatziki sauce would match really good. And when I was creating the other recipes for this month I discovered that I had kind of a country theme going.

Ingredients (for 10 small burgers)
For the patties:
800 grams of chicken mince
1 small zucchini (200 grams)
1 red onion
3-4 tbsp breadcrumbs
1,5 tsp curry powder
10 grams of fresh parsley (finely chopped)
salt and pepper
For the sauce:
0,5 red onion
1 cucumber
2 small cloves of garlic
10 grams of fresh parsley
10 grams of fresh dill
250 grams of Greek yogurt
salt and pepper
Other:
slices of cucumber
0,5 red onion (sliced in rings)
lettuce (e.g. butterhead lettuce)
10 small burger buns
Method
Cut the cucumber in half and remove the seeds with a spoon. Grate the rest with roughly and leave it to drain in a sieve.
Grate the zucchini and finely dice the red onion. Mix through the chicken mince.
Add the curry powder, parsley, bread crumbs, pepper and salt and mix. Tip: Not sure if the seasoning is right? Take a small amount of the mince and bake a mini burger so taste.
Divide the mince in ten equal parts and shape the patties and bake in frying pan with a little bit of oil until fully cooked and golden brown on each side.
In the mean time prepare the buns in the oven if necessary and start making the tzatziki sauce.
Finely dice one half of a red onion and put in a bowl. The other half is for later.
Add the grated cucumber to the onion. Make sure you check that the cucumber is properly drained. If needed press any excess liquid through the sieve first otherwise the tzatziki sauce will be to watery.
Add the pressed garlic, chopped parsley and dill to the cucumber and onion..
Stir in the yogurt and season with salt and pepper to taste.
Building the burger:
Cut open the buns.
Add the tzatziki sauce to both the top and the lower half of the bun.
Then build on the lower half of the bun with: - lettuce - chicken patty - 2 slices of cucumber - a few red onion rings - top half of the bun
