Hamburger month: Falafel burger

It is the final burger of this years hamburger month. Today, 28th of May, on international hamburger day we share the recipe of a vegetarian burger: a falafel burger. We make and buy falafel quite often. We obviously always combine it with our own garlic sauce!

This time we also added Muhammara to the burger. Muhammara is a sauce from the Arabian cuisine with walnuts and grilled pepper. A very tasty combination with the falafel.


It is a shame the hamburger month has come to an end. We had a great time creating, testing and sharing these recipes. Definitely going to do this again!

Ingredients (for 5 burgers)


Falafel burger

  • 400 grams of canned chickpeas

  • 1 red onion

  • 2 cloves of garlic

  • 2 tbsp flour

  • 2 tbsp cumin

  • dash of chili

  • pepper and salt

  • handful of chopped up parsley

Muhammara

  • 60 grams of walnuts

  • 1 clove of garlic

  • 2 grilled peppers from a jar

  • 1 tbsp parsley

  • 1 tsp cumin

  • 0,5-1 tbsp pomegranate molasses

Other

  • garlic sauce

  • 7-8 cherry tomatoes

  • 2 spring onion

  • 1 tsp pomegranate molasses

  • 1 tsp olive oil

  • pepper and salt

  • 5 burger buns

 

Method

  1. Start with the falafel burger: Rinse the chickpeas under cold water and let the drain in a sieve.

  2. Cut up the onion and garlic and put them in a food processor together with the flour and herbs to cut them finely.

  3. Add the chickpeas and continue to cut them up in a pulsing matter. Attention! It is very important not to cut up in continuously. Then you get a paste and it will be difficult to shape and bake the burger later. The chickpeas should remain grainy.

  4. Our food processor is quite small so we have to do this in two batches. When you have a grainy consistency mix again with your hand and shape into 5 burger, each weighing around 100 gram. Make sure to apply some pressure during shaping the burger so that it doesn't fall apart during baking.

  5. Now make the Muhammara in the food processor. Mix all ingredients and keep cutting up in the machine until it is a thick paste. Save the Muhammara for later.

  6. Now make the salad: Slice the cherry tomatoes en spring onion.

  7. Stir the pomegranate molasses and olive oil together with the tomatoes and spring onion and flavor further with pepper and salt.

  8. In the mean time bake the falafel burgers in a frying pan with a little bit of oil. Make sure to gently handle the burgers, the structure is more fragile than a meat patty and might fall apart more easily.

  9. Finish the burger: - Cut open the burger buns. - Add Muhammara to the bottom bun. - Continue with lettuce and the falafel burger. - Finish with some of the tomato salad and a spoon of garlic sauce.
