The best BBQ pork belly slices!

We don't always have pork belly slices to cook on the barbecue. Some times you like to keep it simple and just go for burgers and sausages. Because if we do have pork belly slices then they have to be marinated in our own marinade.


Through the years I came up with this marinade and I think it is the absolute best for pork belly. It's sweet, salty and spicy, the perfect combo!

If you don't like pork belly you can also use this marinade with chicken. We also do this regular and it tastes awesome as well!

Ingredients (for 8 slices)

  • 3 cm fresh ginger

  • 2 cloves of garlic

  • 2 tbsp brown sugar

  • 2 tbsp ginger syrup

  • 4 tbsp sunflower oil

  • 1 tsp chili flakes or sambal

  • 6 tbsp sweet soy sauce (Kecap Manis)

  • salt and pepper

  • 8 slices of pork belly

 

Method

  1. Grate the ginger and garlic.

  2. Add them together with the other ingredients of the marinade in a bowl and give it s good stir.

  3. Add the pork belly and make sure they are fully covered with the marinade.

  4. Leave the pork belly to marinade in the fridge for 24 hours. This should be at least two hours so that the flavours are in the meat.

  5. Cook them on the barbecue. If you like them well done of still a bit tender, this marinade will make then taste very good for sure!!
