I recently had a conversation with a friend. Eating less meat, is that difficult? The question was: What can I cook the. If you are considering eating less meat you might be wondering what dishes you can make. My advise would be to start small. Pick a day in the week or maybe two.
Find a vegetarian recipe and try it out. It doesn't need to be with a meat replacement product. Just a dish without meat. There are many dishes that you know that can easily be made without meat.

In our family we are a big fan of lasagna. So I tried that one time without meat. Also no meat like product. Just no meat and more vegetables. And of course cheese! We are crazy about cheese! Lasagna is still a favorite, just now a vegetarian favorite.
We still eat meat every now and then but now only seldom buy it, But we still make our favorite dishes. This past weekend we made a BBQ chicken pizza. Without the chicken :).

Ingredients (5 servings)
2 bell peppers
1 leek
5 small carrots
half a zucchini
1 large clove of garlic
1 large red onion
1 tbsp oregano
400 grams canned tomatoes
500 grams passata sauce
1 vegetable stock cube
2 tbsp creme fraiche
a packet of lasagna sheets
100 grams of grated cheese
2 balls of fresh mozzarella
50 grams of Grana Padano cheese
handful of fresh basil
30 grams of rocket salad
Method
Cut the bell pepper, carrot and zucchini in small cubes and the leek in half rings.
Finely dice the onion and garlic. Saute the onion and garlic with a dash of olive oil and the oregano in a frying pan. Keep stirring for a few minutes, don't let the onion burn.
Add the other vegetable, canned tomatoes, passata and stock cube. Stir so that everything is mixed together. Leave simmering on a low heat for an hour with a lid on the pan. Stir every 15 minutes.
After that stir in the creme fraiche en keep it simmering for another few minutes. The sauce is now ready.
Take an oven dish and cover the bottom with a layer of the sauce. Then cover with lasagna sheets and add another layer of sauce. Keep doing this until the dish is full. Leave some space top for the cheese.
Cut up the basil leaves and mozzarella. Add this on top of the final layer of sauce.
Finally sprinkle the grated cheese and Grana Padano on top.
Preheat the oven to 180 degrees Celsius.
Place the dish in the middle of the oven and bake for 30 minutes.
